Ingredients

  • 1 Pillsbury pizza crust
  • 4 tbsp fig jam
  • 2 tbsp olive oil
  • 1 package prosciutto 8 slices
  • 4 oz mozzarella
  • 1 cup shredded white cheddar cheese thick cut
  • 1 cup finely grated parmesan
  • 1 cup arugula
  • 4 tbsp fig balsamic glaze divided, (can be found at Kroger, brand: Private Selection)
  • 4 fresh figs optional
  • Pinch red pepper flakes
  • salt and pepper to taste
  • 1 tbsp egg white wash

Instructions

  1. First, roll out uncooked, pre-made pizza dough from the container and prepare according to instructions. Most of them will require pre-baking before adding the toppings. Brush the crust with egg white wash and salt + pepper (or other seasoning of choice).
  2. While the crust is baking, heat a skillet to medium heat. Add prosciutto to the pan and allow it to crisp for 2-3 minutes on each side or until lightly fried.
  3. Once the pizza crust has completed its initial baking, spread fig jam evenly across the center - leaving about ½ inch around the border of the pizza. Drizzle olive oil in a circular fashion over top.
  4. Then, rip small pieces of mozzarella cheese from the ball and scatter on the pizza. Add white cheddar cheese on the pizza, too. Then top with crispy prosciutto. Sprinkle half of the parmesan on top of the prosciutto.
  5. Add 2 tablespoons of the fig balsamic glaze to the pizza (again in a circular fashion).
  6. Bake for the remaining time the packaged crust calls for.
  7. Five minutes prior to the pizza being done, remove it and add the arugula, salt + pepper, red pepper flakes, remaining parmesan, and balsamic glaze and return to the oven.
  8. Once pizza is finished cooking, remove it from the oven, garnish with slices of fresh figs, more arugula (if desired). Slice and enjoy hot!

Notes

  • To reheat this pizza, heat the oven to 300°F and allow the cheese to melt again. It’s significantly better than the microwave and allows the crust to still have a good crunch.

  • Store leftovers wrapped in tinfoil in the fridge for up to 5 days. You can also freeze for up to three months, but leave off the arugula until you’re ready to enjoy.
