Prosciutto Wrapped Asparagus

Prosciutto Wrapped Asparagus is an easy and delicious side dish that will complement any meal. It comes together in less than 30 minutes, but tastes like a gourmet dish!

Ingredients

  • 12 asparagus spears trimmed
  • 3 ounces prosciutto each strip cut in half
  • 8 ounces cream cheese softened
  • 4 tablespoons green onion chopped
  • 2 teaspoons minced garlic

Instructions

  1. Preheat oven to 450 degrees. Prepare a baking sheet pan by lining it with aluminum foil and spraying generously with cooking spray or drizzle with olive oil.
  2. Blanch the asparagus by dropping it into boiling water for 2 minutes. Then, remove from the boiling water and place it in an ice bath. Drain well and pat dry with a paper towel. Set aside
  3. Make the cream cheese mixture by mixing cream cheese, green onion, and minced garlic.
  4. Spread cream cheese mixture over each halved prosciutto slice.
  5. Wrap 2-3 spears of asparagus in a slice of prosciutto with the cream cheese side touching the asparagus.
  6. Place asparagus bundles in a single layer on the prepared baking sheet, then spray lightly with cooking spray.
  7. Bake for 15 minutes until asparagus is tender.

Notes

  • Resist the urge to add salt to this recipe. Prosciutto is very salty!
  • You can use thin slice bacon instead of prosciutto. 
  • This recipe is best in the Spring when asparagus is in season!
