  • 1/2 cup milk
  • 1/4 cup espresso cold, brewed
  • 1/4 cup confectioners sugar or sugar substitute of your choice
  • 2 tablespoons protein powder or chocolate protein powder, vanilla
  • 4 ounces dark chocolate melted and cooled - or sugar-free chocolate

Instructions

  1. Add the heavy cream to a chilled bowl and whip until stiff peaks form.
  2. In a separate bowl, combine milk, cooled coffee, powdered sugar or sugar substitute, protein powder, and cooled melted chocolate. Stir until the mixture is homogeneous.
  3. Gently, using a rubber spatula fold the whipped cream into the coffee mixture, until fully combined.
  4. Divide the mousse mixture into serving bowls and refrigerate for at least 2-3 hours, or until set.
