Ingredients

  • 1 1/2 cups all-purpose flour + 2 Tablespoons
  • 1/3 cup whey protein
  • 1/4 cup collagen peptides
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1 tablespoon granulated sugar
  • 1/2 teaspoon salt
  • 2 egg or liquid egg whites, white
  • 2 tablespoons avocado oil or melted butter
  • 1 1/4 cups water
  • 1/2 teaspoon vanilla extract

Instructions

  1. In a large bowl, whisk all purpose flour together with whey protein, collagen, baking powder, baking soda, salt and sugar. Create a well in the center for the wet ingredients.
  2. Into the center of the dry ingredients, measure and add in the egg whites, oil, water and vanilla extract.
  3. Stir the wet ingredients into the dry to create the pancake batter. It will be slightly thin batter but this is normal.
  4. Preheat nonstick skillet over medium heat. Spray with nonstick cooking spray. Pour 3 tablespoons of batter per pancake to fry. Cook until golden and then flip.
  5. Serve warm plain or with syrup.
