Provencal Mushrooms

Provencal Mushrooms feature thickly sliced meadow or button mushrooms sautéed with minced onion and garlic in olive oil. The mushrooms release their moisture, which is boiled off before browning to concentrate flavors. Fresh parsley and a splash of lemon juice add brightness just before serving. This preparation yields mushrooms that are tender with browned edges and a savory, aromatic profile, typical of classic Provençal cooking techniques.

Description

The recipe begins by sautéing thick mushroom slices in a hot pan to encourage them to release their moisture. A pinch of salt and minced onion are added early, allowing them to simmer together until the liquid evaporates, intensifying the mushroom flavor. Adding olive oil afterward promotes browning at the edges, introducing a pleasant texture contrast. Minced garlic and black pepper are briefly cooked to preserve their aroma without burning.

The final addition of chopped parsley and a splash of lemon juice right at serving introduces fresh herbal notes and acidity that balance the richness from the oil and mushrooms. The result is a dish with tender mushrooms that have both savory depth and a bright finish. This simple but flavorful side or vegetarian dish highlights mushroom textures and natural earthiness.

Provencal Mushrooms can be served as an accompaniment to meat or poultry, atop toasted bread for a starter, or alongside other Mediterranean-inspired dishes. Its balance of flavors and ease of preparation make it a versatile part of a meal.

Ingredients

Servings
  • 1 pound meadow mushroom or regular button mushrooms
  • 1/2 cup onion minced
  • salt
  • black pepper
  • 2 tablespoons olive oil
  • 3 garlic minced, cloves
  • 1/4 cup parsley chopped
  • lemon juice to taste

Instructions

  1. Wipe the mushrooms clean with a damp paper towel or cloth. Slice thickly and put in a large saute pan. Set the pan over medium-high heat. Soon the mushrooms will begin to sizzle. Shake the pan often to keep the mushrooms moving in the pan. After a couple minutes they will begin to release their water. Sprinkle a healthy pinch of salt over them now and add the minced onion. In a few more minutes the mushrooms and onion will be bathing in boiling mushroom water. Let this boil until the liquid is almost all gone.
  2. Add the olive oil and toss to coat. Saute until everything begins to brown a bit at the edges, then add the garlic and a little black pepper. Cook another 90 seconds, then add the parsley and toss to combine. Splash a little lemon juice over everything riht as you serve.
