Description
This jam starts with washing, pitting, and quartering fresh plums, which are then mixed with sugar and left to macerate overnight in the refrigerator. This step extracts juices naturally and sweetens the fruit, preparing it for cooking.
The following day, the plum and sugar mixture is heated on low while stirred constantly to avoid scorching. The mixture is brought to a boil briefly and then removed from heat, repeated several times with cooling in between. These cycles help thicken the jam without overcooking the fruit.
After the final boil, the jam is transferred to jars for immediate use or canning for long-term storage. The result is a richly flavored, thick plum jam ideal for spreading on bread or adding to desserts.

- 1 qt sugar
Instructions
- Rinse the plums, remove the seeds, and slice them into quarters.
- Place the plums into a pot and cover them with sugar. Allow them to sit in the refrigerator overnight to develop a nice juice.
- The next day heat the plum mixture over low heat on the stovetop, stirring it constantly to prevent the fruit from burning. Once it begins to boil, immediately remove it from heat. Repeat this process 5-7 more times, letting the plums completely cool between each round (this process will help to thicken the jam).
- Once you bring the plums to their last boil, transfer the jam into jars or can them for longer use.
