Pulled Pork Hash
Description
This Pulled Pork Hash starts by sautéing diced yellow and red onions along with yellow, red, and orange bell peppers and jalapenos in olive oil until softened and fragrant. Garlic is added briefly before folding in shredded pulled pork, paprika, salt, and pepper. Frozen Southern-style hash browns are added and fried for about 25 minutes, stirring occasionally, to achieve a crispy texture. Meanwhile, eggs are softly scrambled and stirred in towards the end with a cup of shredded Colby jack cheese, melting it into the hash. The remaining cheese is sprinkled on top as a finishing touch. Optional sliced jalapenos can garnish the dish for additional spice. The combination highlights savory smoked pork, tender vegetables, and melted cheese with a crispy potato base, making it a comforting meal for breakfast or anytime.
