Pulled Pork Shepherd's Pie
Description
This Pulled Pork Shepherd's Pie uses pulled pork mixed with BBQ sauce, canned mixed vegetables, and drained corn as a flavorful filling base. The mixture is placed in a baking dish and topped with a thick layer of mashed potatoes, which smooth out over the mixture for an even crust. Baking at 375°F melds the ingredients, heating through and allowing flavors to combine.
Near the end of baking, shredded cheddar cheese is sprinkled on top and melted to provide a rich, slightly sharp layer contrast to the soft mashed potatoes and savory filling. The dish offers a mix of savory pork, smoky sauce, sweet corn, tender vegetables, and creamy potato that works well as a satisfying dinner or potluck option.
Serving immediately while the cheese is melted warm maximizes texture and flavor. The parsley garnish adds a touch of freshness and color to the hearty casserole.
