  • 2 tablespoons butter
  • 1 cup onion chopped
  • 2 garlic chopped, cloves
  • 1 teaspoon curry powder
  • 1/4 teaspoon saffron
  • 4 cups chicken broth or vegetable broth
  • 15 ounces pumpkin puree
  • 1/2 cup heavy cream

Instructions

  1. Melt the butter in a medium pot over medium heat. Add the onions and garlic and sauté until the onions are translucent.
  2. Add the curry powder, stir, and cook for about 1 minute. This mixture should be very fragrant. Then add the saffron and stir again.
  3. Add the chicken broth and pumpkin puree and stir until fully blended. Reduce the heat to low and cook for about 5 minutes or until heated through.
  4. Add the heavy cream and stir to combine. Taste the soup and season with salt if desired.

Notes

  • Sprinkle freshly grated nutmeg on top to complement the warm spice flavors of the bisque.
