Pumpkin Bread Recipe

This Pumpkin Bread recipe combines pumpkin puree with a blend of warm spices, sugar, egg whites, and vegetable oil to create a moist loaf. Topped with pepitas, the bread offers a tender crumb with subtle autumnal flavors, making it a comforting baked good during pumpkin season.

Description

The bread starts with mixing dry ingredients including all-purpose flour, sugar, baking soda, and a mixture of pumpkin pie spice, nutmeg, cinnamon, and salt. In a separate bowl, vegetable or coconut oil, egg whites, pumpkin puree, and vanilla extract are beaten until thick. The dry mixture is gently incorporated, careful to avoid overmixing.

Batter is poured into a prepared loaf pan and topped with pepitas that add a nutty crunch to the soft bread. Baking at 350°F for 50 to 65 minutes results in a loaf with a firm crust and moist interior, which is checked by a toothpick tested for doneness. Cooling before slicing ensures the bread sets properly.

This recipe yields a classic pumpkin bread with warm spice notes enhanced by a touch of vanilla and a soft, tender texture. The pepitas offer a contrasting texture on top and a subtle nutty flavor. It makes a suitable snack or breakfast accompaniment during fall or whenever pumpkin flavors are desired.
