Description
Pumpkin Chipotle Hummus is a variation on classic hummus, substituting some chickpeas with pumpkin puree to add a subtle sweetness and creamy body. The chipotle pepper and adobo sauce introduce smoky heat that complements the maple syrup’s mild sweetness. Garlic and lemon juice provide freshness and pungency, while smoked paprika reinforces the smoky notes.
The ingredients are pureed until very smooth, with ice water added gradually to achieve the desired consistency—light and scoopable but still rich. Toppings like roasted pepitas add a crunchy contrast, while a drizzle of olive oil brings additional richness. Extra chickpeas and a maple-chipotle sauce drizzle can be added for enhanced texture and flavor layers.
This hummus pairs well with pita chips or crackers as a snack or appetizer. It can be stored sealed in the refrigerator for a few days, maintaining its texture and flavor for convenient use.
Ingredients
- 2 chickpeas drained, rinsed and patted dry, 14 ounce cans
- ½ cup tahini
- ½ cup pumpkin puree
- 1 chipotle pepper
- 2 tablespoons adobo sauce from the can of chipotle peppers
- 2 garlic cloves
- 1 tablespoon maple syrup
- 2 tablespoons lemon juice freshly squeezed
- ½ teaspoon smoked paprika
- salt kosher salt
- black pepper kosher salt
- ¼ to ⅓ cup water ice
- Pita chips for serving, etc
- crackers for serving, etc

- Pepitas roasted, salted
- olive oil for drizzling

- 1 T maple syrup whisked together, 2 teaspoons chipotle adobo sauce
- 1 T chipotle adobo sauce whisked together, 2 teaspoons chipotle adobo sauce
Instructions
- Place the chickpeas in a blender and pulse and blend until they begin to break down. Add in the tahini and blend to combine. Add in the pumpkin, chipotle pepper, adobo sauce, garlic, maple syrup, lemon juice, smoked paprika and a big pinch of salt and pepper. Puree until smooth, scraping down the sides as needed. I often let it puree for 2 to 4 full minutes!
- With the processor running, stream in the ice water until you get your desired consistency. Taste the hummus and blend in more salt and pepper is desired.
- Spoon the hummus into a bowl. Top with a drizzle of olive oil, extra chickpeas (optional!), a sprinkle of pepitas (as many as you want) and a drizzle of the maple chipotle.
- Serve! This stays great sealed in the fridge for a few days.
