Pumpkin Chocolate Chip Cookies

Pumpkin Chocolate Chip Cookies are quick and easy soft pumpkin cookies made with warm spices, canned pumpkin and lots of chocolate chips.

Ingredients

  • 1 cup butter softened, unsalted
  • 3/4 cup brown sugar , packed
  • 1/2 cup granulated sugar
  • 1 large egg
  • 3/4 cup pumpkin canned
  • 1 teaspoon vanilla extract
  • 2 1/4 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1/2 teaspoon nutmeg
  • 1/8 teaspoon ginger
  • 2 cups chocolate chips semi-sweet

Instructions

  1. Preheat oven to 375 degrees.
  2. Add butter, brown sugar and sugar to a stand mixer and cream on medium speed for 1-2 minutes until light and fluffy.
  3. Add in the egg, pumpkin and vanilla until smooth.
  4. Sift the flour, baking soda, cinnamon, salt, nutmeg and ginger together in a medium bowl.
  5. Add in the dry ingredients until just combined then fold in the chocolate chips.
  6. Using 1 tablespoon sized balls of cookie dough, place them on parchment paper lined cookie sheets and bake for 10-12 minutes.
