Pumpkin French Toast

Pumpkin French Toast uses thick slices of brioche soaked in a spiced pumpkin custard mix before being cooked to a golden brown. The blend of cinnamon, cardamom, ginger, nutmeg, allspice, and cloves provides warm autumn flavors balanced by the creamy richness of pumpkin puree and molasses. The cooking method involves soaking the bread briefly and pan-frying with a combination of butter and vegetable oil to manage browning while maximizing flavor. It's ideal for a cozy breakfast or brunch served hot with butter and maple syrup.

Description

Pumpkin French Toast combines thickly sliced brioche bread soaked in a seasoned custard batter made from eggs, half and half, pumpkin puree, molasses, and a blend of fall spices like cinnamon, cardamom, ginger, nutmeg, allspice, and cloves. The bread is soaked briefly so it absorbs the custard without becoming soggy. Cooking uses a skillet with both butter and vegetable oil, which allows for rich buttery flavor while preventing the bread from burning at medium heat. The toast is cooked until the outside is nicely browned and slightly crisp, while the center remains tender and moist.

The spiced pumpkin flavor and the creamy texture from the custard make this French toast a seasonal choice for breakfast or brunch. It pairs well with traditional toppings like butter and maple syrup, enhancing its comforting taste. This recipe suits occasions when a warm, flavorful, fragrant morning dish is desired.

Ingredients

Servings
  • 1 loaf brioche bread thickly sliced, quantity 8 slices
  • 2 large egg
  • 3/4 cup half and half
  • 1 Tbsp sugar
  • 1 Tbsp molasses
  • 1/2 cup pumpkin puree not pie filling, canned
  • 1/4 tsp cinnamon
  • 1/4 tsp cardamom
  • 1/4 tsp ginger
  • 1/4 tsp nutmeg
  • 1/4 tsp allspice
  • 1/4 tsp cloves
  • butter
  • vegetable oil

Instructions

  1. Whisk the eggs, half and half, molasses, pumpkin, and spices together in a wide shallow bowl. A pie plate works well. Make sure the eggs are completely broken up and combined well.
  2. Heat a skillet over medium heat and melt a pat of butter and a bit of vegetable oil in the pan. Note: combining butter and vegetable oil gives you the best of each: you get the flavor of butter but the higher burn temperature from the oil.
  3. Soak the bread, one at a time, in the pumpkin batter. Each side should soak for about 30 seconds. Let any excess drip off before adding to the hot skillet. You should hear a gentle sizzle when the bread hits the pan.
  4. Let cook until browned on each side. If your bread is very thick, you may want to lower the heat so the insides can cook without excess browning.
  5. Serve hot with butter and maple syrup.
