Ingredients

  • 2 cups old fashioned oats
  • 1/2 cup Pepitas
  • 1/2 cup unsalted pecans, chopped
  • 1/2 cup unsalted almonds, chopped
  • 1 teaspoon pumpkin pie spice
  • 1 1/2 teaspoons cinnamon
  • 1/4 teaspoon kosher salt
  • 1 egg white
  • 1/4 cup pumpkin puree
  • 2 tablespoons avocado oil
  • 3 tablespoons brown sugar
  • 1/3 cup maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 cup dried cranberries

Instructions

  1. Preheat oven to 325° F. and line a rimmed baking sheet with parchment paper or a silpat mat.
  2. In a large bowl combine the oats, pepitas, nuts, cinnamon, pumpkin pie spice, and salt.
  3. In a smaller bowl whisk the egg white for about a minute until it is thick and foamy. Add the pumpkin, oil, brown sugar, maple syrup, and vanilla to the egg white and whisk together.
  4. Pour the pumpkin mixture into the oat mixture and stir together with a rubber spatula. Spread the granola out onto the baking sheet in an even layer. Bake the granola for about 40 minutes, stirring it every 10 minutes so it bakes evenly.
  5. Let the granola cool on the baking sheet for 15-20 minutes before removing it. Once the granola has cooled completely, store it in an airtight container for 2-3 weeks, or in the freezer for up to 3 months.
