Pumpkin Granola

Pumpkin Granola blends rolled oats with chopped pecans, pumpkin puree, maple syrup, and pumpkin pie spice to create a crunchy, spiced snack or breakfast topping. Coconut oil and vanilla add richness and aroma, while vegan chocolate chips are stirred in after baking to meld slightly as the granola cools, adding a sweet touch.

Description

This Pumpkin Granola recipe starts by combining oats, pecans, and seasonings including pumpkin pie spice and vanilla, along with pumpkin puree and maple syrup to moisten and flavor the mixture. Melted coconut oil provides fat to bind the granola and aid in crisping during baking. Salt enhances the overall flavor profile.

The mixture is spread onto parchment-lined baking sheets and baked at a moderate oven temperature until the oats turn golden and crisp. After baking, vegan chocolate chips are sprinkled on the hot granola so they melt slightly and adhere upon cooling, giving occasional pockets of chocolate sweetness.

Once cooled, the granola is stored airtight to retain crunch and freshness, lasting up to two weeks or longer if refrigerated or frozen. The pecans provide a satisfying nutty texture and flavor, though substitutions with other nuts or seeds are possible. This granola works well as a snack, cereal topping, or mix-in for yogurt.

Ingredients

Servings
  • 3 cups rolled oats gluten-free, if needed, old fashioned
  • cup pecans chopped or whole, raw
  • ¼ cup pumpkin puree canned or homemade
  • ½ teaspoon vanilla
  • ½ teaspoon pumpkin pie spice
  • ½ cup maple syrup
  • cup coconut oil melted
  • ½ teaspoon salt sea salt
  • cup chocolate chips vegan

Instructions

  1. Preheat the oven to 325°F. Line a rimmed baking sheet or baking stone with parchment paper.
  2. Mix all ingredients except the chocolate chips in a large bowl.
  3. Spread mixture onto the prepared baking sheet.
  4. Bake in the center of the oven for 40-50 minutes or until oats are golden brown, dry and crisp. Allow the granola to cool for about 5 minutes, then sprinkle the chocolate chips over granola while it continues to cool. The chocolate chips will melt a bit.
  5. Once granola is completely cool, transfer to an airtight container (I use a mason jar) and store in a cool place for 1-2 weeks. I like keeping mine in the fridge or freezer so it lasts longer and stays extra crunchy.

Notes

  • Pecans provide a signature flavor and texture but can be swapped for other nuts or seeds according to preference.
