Ingredients

  • 2 cups almond milk unsweetened plain or cashew milk
  • ¼ cup pumpkin puree plain
  • ¼ cup whey protein powder optional but adds creaminess; Vanilla Bean or Cookies-n-Cream flavors work also, chocolate flavor, 1 scoop, THM
  • ¼ cup Lakanto Classic sweetener more or less to taste, or equivalent sweetener
  • cup cocoa powder unsweetened
  • 2 tablespoons heavy cream (optional; makes the recipe an S; adds creaminess and flavor)
  • ½ teaspoon pumpkin pie spice
  • ½ teaspoon ground cinnamon
  • pinch mineral salt
  • ½ teaspoon vanilla extract pure
  • ½ teaspoon maple flavoring (optional)

Instructions

  1. In a small to medium saucepan, whisk together the milk, pumpkin, protein powder, sweeteners, cocoa powder, pumpkin pie spice, cinnamon, and salt.
  2. Bring to a boil over medium-high heat, stirring frequently to prevent boiling over.
  3. Remove from heat. Add in the vanilla and maple flavoring.
  4. Serve with homemade marshmallows or top with whipped cream.
