Ingredients

Servings
  • 1/2 cup rolled oats or old fashioned oats
  • 1 tablespoon chia seeds
  • 1/2 teaspoon pumpkin pie spice
  • salt pinch
  • 1/2 cup almond milk vanilla
  • 1/4 cup pumpkin puree
  • 1/4 cup Greek yogurt vanilla flavor
  • 1 teaspoon maple syrup
  • 1/2 teaspoon vanilla extract
  • Whipped Cream optional
  • pecans optional, chopped

Instructions

  1. Clean and dry the jar. Place oats, chia seeds, salt, and pumpkin pie spice in the jar.
  2. Add milk, pumpkin puree, greek yogurt, vanilla extract, and maple syrup.
  3. Stir. Place in the fridge for at least 5 hours, or overnight. Remove from fridge. Stir again.
  4. Top with desired toppings and enjoy. Overnight oats without toppings will stay good in the fridge for about 5 days.

Notes

  • Nutrition Facts do not include whipped cream or pecans.
  • To prevent chia seeds from clumping, give the mixture an additional stir after 30 minutes of refrigeration.
  • Make sure to use pumpkin puree, not pumpkin pie filling.
