Pumpkin Pie Baked Oatmeal

Pumpkin Pie Baked Oatmeal is a hearty bake featuring old fashioned oats combined with pumpkin, protein powder, and warm pumpkin pie spice. This dish yields a moist, tender texture that holds together well once baked, with a rich sweetness enhanced by maple syrup and a tangy cream cheese and Greek yogurt frosting to finish.

Description

This recipe for Pumpkin Pie Baked Oatmeal blends oats with canned pumpkin, cottage cheese, eggs, and vanilla protein powder, along with pumpkin pie spice for a seasonal flavor profile. The batter is blended smooth to evenly incorporate all ingredients, then baked until set and slightly golden. The texture is soft but stable, allowing the oatmeal to be sliced into squares for easy servings.

The addition of protein powder and cottage cheese enriches the texture and nutritional content, while the pumpkin pie spice adds warm aromatic notes typical of pumpkin desserts. The topping frosting, made from cream cheese, Greek yogurt, and maple syrup, adds a creamy and mildly sweet contrast when applied after baking.

The oatmeal bake is intended for six servings, suitable for breakfast or a comforting snack. The frosting is best added just before serving to maintain its freshness and consistency. The recipe suggests keeping the frosting refrigerated until use to preserve its texture and flavor.

Ingredients

Servings
  • 3 cups old fashioned oats
  • 2 coops protein powder vanilla
  • 1 tsp baking powder
  • 1 can pumpkin
  • 8 tbsp syrup
  • 3 egg
  • 1 cup milk 2%
  • 1 cup cottage cheese
  • 1 tsp pumpkin pie spice
  • ½ tsp salt

For the Frosting

  • ½ cup cream cheese
  • ½ cup Greek yogurt plain, nonfat
  • 2 tbsp maple syrup

Instructions

For the Oatmeal Bake

  1. Preheat your oven to 350 °F (177 °C).
  2. In a blender, blend together the pumpkin, milk, cottage cheese, eggs, syrup, salt, baking powder, protein powder, spices and pumpkin pie spice until smooth.
  3. Spray a 13"x9" pan with oil and add your oat. Pour in the pumpkin mix and stir thoroughly.
  4. Bake for 50-60 minutes.

For the Frosting

  1. Mix the cream cheese, yogurt, and maple syrup.
  2. Place into a ziplock bag (or piping bag) and set aside.

Plating

  1. This recipe makes 6 servings. Cut the oatmeal into 6 equal pieces. Once the oatmeal bake has cooled a bit, top with the frosting. I frost my oatmeal the day I cook it, it is probably better to keep your frosting in the fridge and frost the day of eating but it doesn't make a huge difference.
