Ingredients
- 3 cups old fashioned oats
- 2 coops protein powder vanilla
- 1 tsp baking powder
- 1 can pumpkin
- 8 tbsp syrup
- 3 egg
- 1 cup milk 2%
- 1 cup cottage cheese
- 1 tsp pumpkin pie spice
- ½ tsp salt
For the Frosting
- ½ cup cream cheese
- ½ cup Greek yogurt plain, nonfat
- 2 tbsp maple syrup
Instructions
For the Oatmeal Bake
- Preheat your oven to 350 °F (177 °C).
- In a blender, blend together the pumpkin, milk, cottage cheese, eggs, syrup, salt, baking powder, protein powder, spices and pumpkin pie spice until smooth.
- Spray a 13"x9" pan with oil and add your oat. Pour in the pumpkin mix and stir thoroughly.
- Bake for 50-60 minutes.
For the Frosting
- Mix the cream cheese, yogurt, and maple syrup.
- Place into a ziplock bag (or piping bag) and set aside.
Plating
- This recipe makes 6 servings. Cut the oatmeal into 6 equal pieces. Once the oatmeal bake has cooled a bit, top with the frosting. I frost my oatmeal the day I cook it, it is probably better to keep your frosting in the fridge and frost the day of eating but it doesn't make a huge difference.
