Pumpkin Pie Oatmeal

Pumpkin Pie Oatmeal combines steel cut oats simmered with pumpkin butter, cinnamon, nutmeg, and vanilla. The oats are toasted in butter before simmering in a mixture of water and milk, creating a creamy, cozy breakfast with warm autumn spices. It’s served with coconut cream, sliced almonds, and extra pumpkin butter, adding contrasting textures and richness. Adjust sweetness with maple syrup if needed, making this oatmeal a comforting choice for cooler mornings or when craving fall flavors.

Description

The Pumpkin Pie Oatmeal recipe uses steel cut oats toasted lightly in butter and cinnamon to develop a nutty base before simmering in water, milk, and salt. Pumpkin butter, vanilla extract, and finely grated nutmeg are stirred in toward the end to infuse the dish with pumpkin pie spices and smooth sweetness. The texture is creamy yet retains the oats' chewiness, balanced by the crunchy sliced almonds on top. Coconut cream adds a dairy-free richness that complements the spices and pumpkin.

Cooking the oats slowly and stirring frequently helps achieve a tender but substantial texture. The pumpkin butter provides both moisture and flavor, but sweetness levels can vary by brand, so tasting near the end and adding maple syrup or honey allows customization. Sprinkling cinnamon on top enhances the aroma and flavor with fresh warmth.

This oatmeal suits a fall or winter breakfast, offering a seasonal alternative to plain oats. The toppings add elegance and texture, making it suitable for a comforting weekend breakfast or a lightly indulgent treat. It pairs well with a cup of coffee or warm tea.

Ingredients

Servings
  • 2 tablespoons butter
  • 1 cup steel cut oats
  • ¼ teaspoon cinnamon plus extra for sprinkling
  • 2 cups water
  • 1 ½ cups milk
  • ¼ teaspoon salt
  • cup pumpkin butter plus more for topping
  • 2 teaspoons vanilla extract
  • pinch nutmeg finely grated
  • maple syrup if needed
  • coconut cream for topping, whipped
  • almonds for topping, sliced

Instructions

  1. Note: the sweetness level of this recipe will differ depending on the brand of pumpkin butter you use. I suggest tasting the oats near the end of cook time and if needed, stirring in maple syrup or honey for more sweetness.
  2. Heat the butter in a pot or large skillet over medium-low heat. Once melted, stir in the oats and cinnamon. Cook, stirring often, until the oats are toasty, about 3 to 4 minutes.
  3. Pour in the water, milk and salt. Bring the mixture to a boil then reduce it to a simmer. Cook, stirring often, for 15 minutes. Stir in the pumpkin butter, vanilla extract and grated nutmeg. Taste and if needed, add in a bit of honey or maple syrup.
  4. Serve the oats topped with coconut cream, sliced almonds and a dollop of pumpkin butter. Add a sprinkle of cinnamon and eat!
