Ingredients

  • 1 cup almond milk or milk of choice, unsweetened
  • 1/4 cup pumpkin puree 100% pure, canned
  • 1/4 cup yogurt plain, Greek
  • 1 1/3 cup rolled oats old-fashioned
  • 1 Tbsp. sugar or honey or maple syrup
  • 1 Tbsp. chia seeds
  • 1 Tbsp. Flaxseed ground
  • 1 tsp. vanilla extract
  • 1/2 tsp. pumpkin pie spice
  • 1/2 tsp. cinnamon
  • 1/8 tsp. salt
  • 2 Tbsp. vanilla protein powder optional

Optional toppings: pure maple syrup, chopped walnuts or pecans, Greek yogurt, ground cinnamon

Instructions

  1. Whisk together the pumpkin, yogurt, and milk in a medium sized bowl.
  2. Stir in remaining ingredients until well combined.
  3. Divide the oats between two mason jars. Secure the lid on and place in refrigerator overnight or for at least 6 hours.
  4. Add toppings in the morning right before you eat! Add liquid if oats are too thick for your preference. Enjoy the oats cold, or place in microwave for 30-45 seconds for some warmth.

Notes

  • These pumpkin overnight oats will keep for 2-3 days in the fridge. Note that the oats will continue to soften the longer they sit in the fridge so it is best to enjoy them within the first couple days. 
  • Homemade pumpkin pie spice: 1 tsp. ground cinnamon, 1/2 tsp. ground ginger, 1/4 tsp. ground cloves, 1/8 tsp. ground nutmeg
