  • 1/4 cup Greek yogurt plain, non-fat
  • 1/2 cup almond milk unsweetened
  • 1/4 cup pumpkin puree
  • 1/2 teaspoon vanilla extract
  • 1–2 tablespoons pure maple syrup
  • 1/2 cup rolled oats
  • 2 teaspoons chia seeds
  • 1/2 teaspoon pumpkin pie spice

Instructions

  1. In a medium bowl, whisk together Greek yogurt, almond milk, pumpkin puree, vanilla extract, and 1 tablespoon maple syrup until the mixture is smooth.
  2. Fold in the rolled oats, chia seeds, and pumpkin pie spice to the mixture. Adjust sweetness by adding more maple syrup to taste, if desired.
  3. Transfer the mixture into a glass jar or airtight container. Refrigerate for at least 4 hours, or overnight, allowing the oats to soak and flavors to combine.
