Ingredients

  • 2/3 cup milk of choice
  • 1/4 cup Greek yogurt Any fat content, plain
  • 1 coop protein powder optional, vanilla
  • 1/4 cup pumpkin puree
  • 1-2 tablespoon maple syrup Use 2 or to taste if you aren't using protein powder
  • 1 teaspoon vanilla extract
  • 1 tablespoon chia seeds
  • 1/2 teaspoon pumpkin pie spice
  • 1/4 teaspoon ground cinnamon
  • salt pinch
  • 2/3 cup rolled oats
  • almond butter pecans, graham crackers for toppings

Instructions

  1. In a large bowl whisk together the pumpkin purée, milk, Greek yogurt, protein powder, maple syrup, vanilla, pinch of salt, pumpkin pie spice and cinnamon until combined.
  2. Pour in the oats and chia seeds and stir together. Divide the oats into two bowls or jars and cover with lids or plastic wrap. Refrigerate for at least 3 hours or overnight.
  3. Serve the oats as is or topped with almond butter, chopped nuts, graham cracker crumbs, maple syrup and cinnamon, or any other topping of your choice.
