Pumpkin Pie Smash Cocktail

The Pumpkin Pie Smash Cocktail is a bourbon-based drink sweetened with homemade pumpkin pie syrup, accented by bitters and garnished with a cinnamon stick. The syrup combines pumpkin puree with sugar, water, pumpkin pie spice, and vanilla for a smooth, spiced sweetness that complements the warmth of the bourbon. Served over crushed ice, it offers a refreshing yet rich seasonal cocktail.

Description

This cocktail starts with a homemade pumpkin pie syrup made by heating sugar, water, pumpkin puree, and pumpkin pie spice until the sugar dissolves and the mixture simmers. After cooling, vanilla extract is added, and the syrup is strained to create a smooth base. This syrup imparts familiar fall spices and pumpkin flavor in liquid form.

The drink is assembled in a chilled glass filled with crushed ice. The syrup and cocktail bitters are added first, then bourbon is poured on top and gently stirred. A cinnamon stick garnish provides aroma and enhances the festive character of the cocktail.

Ideal for autumn or holiday gatherings, the Pumpkin Pie Smash balances sweetness, spice, warmth, and chill, making it suitable for sipping slowly. The syrup can be made ahead and stored refrigerated for approximately a week, allowing easy preparation on serving day.

  1. Heat the sugar, water, pumpkin puree and pie spice in a saucepan over medium-low heat. Whisk constantly until the sugar dissolves and let the mixture come to a simmer. Remove it from the heat and let it cool slightly, then add the vanilla extract. Strain it through a fine mesh strainer so you’re left with a syrup consistency.
