Description
This cocktail starts with a homemade pumpkin pie syrup made by heating sugar, water, pumpkin puree, and pumpkin pie spice until the sugar dissolves and the mixture simmers. After cooling, vanilla extract is added, and the syrup is strained to create a smooth base. This syrup imparts familiar fall spices and pumpkin flavor in liquid form.
The drink is assembled in a chilled glass filled with crushed ice. The syrup and cocktail bitters are added first, then bourbon is poured on top and gently stirred. A cinnamon stick garnish provides aroma and enhances the festive character of the cocktail.

Ingredients

- 1 cup sugar
- 1 cup water
- 1/3 cup pumpkin puree

- 2 ounces bourbon

Instructions

- Heat the sugar, water, pumpkin puree and pie spice in a saucepan over medium-low heat. Whisk constantly until the sugar dissolves and let the mixture come to a simmer. Remove it from the heat and let it cool slightly, then add the vanilla extract. Strain it through a fine mesh strainer so you’re left with a syrup consistency. This can be kept in a sealed container in the fridge for a week or so!
