Pumpkin Quesadilla Recipe

The Pumpkin Quesadilla uses artisan flatbread, carved with pumpkin face cutouts, layered with mozzarella or Monterey jack and cheddar cheese, then folded and baked until the cheese melts and shows through the cutouts. This results in a warm, cheesy snack with festive pumpkin designs.

Description

This recipe features folding flatbread pre-cut with pumpkin face shapes, layered with thinly sliced mozzarella or Monterey jack and cheddar cheese on the opposite side. Folding the flatbread encloses the cheese while allowing the cheddar to peek through the pumpkin face openings during baking.

Baking at 425°F for 3 to 5 minutes melts the cheeses and crisps the flatbread edges. Pressing on the pumpkin face after baking encourages the cheese to ooze through the cutouts, enhancing the visual effect. This preparation creates a combination of soft, melted cheese and crisp bread texture.

The quesadillas serve six and provide a playful, seasonal dish that is easy to prepare. The pumpkin face cutouts add a festive touch ideal for autumn gatherings or light meals.

Ingredients

Servings
  • 6 Foldit Artisan Flatbread
  • 4 oz mozzarella cheese or Monterey jack (thinly sliced)
  • 4 oz cheddar cheese thinly sliced

Instructions

  1. Preheat oven to 425 degrees.
  2. For the pumpkin: Using a sharp paring knife, cut a pumpkin face into one side of each flatbread. Reserve the larger pieces to create stems (if desired).
  3. Place a layer of monterey jack or mozzarella on the opposite side of the flatbread (the one without the face cut into it). Then layer with cheddar cheese. Fold the flatbread so that the cheddar is showing through the pumpkin face. Place in the oven and bake for 3-5 minutes. Remove and gently press on the face so that the cheese oozes through the cutouts. Serves 6.
