  • 2 cups milk any type (I used nonfat milk
  • 2 cups water
  • ½ cup pumpkin canned 100% pure
  • 2 tablespoons maple syrup
  • 1 teaspoon pumpkin pie spice
  • 1 teaspoon vanilla extract
  • Pinch kosher salt
  • 2 cups old fashioned oats

Toppings:

  • ¼ cup pecan halves
  • maple syrup (optional)

Instructions

  1. Whisk the milk, water, pumpkin, maple syrup, pumpkin pie spice, vanilla and salt together in a large saucepan and bring to a simmer over medium heat.
  2. Lower the heat to medium low and stir in the oats. Simmer 10-15 minutes until oats are cooked.
  3. Divide the oatmeal between four bowls and top with pecans and more maple syrup, if desired.
