  • 2 cups milk almond, cashew, oat, or regular, of choice
  • 2 cups water
  • 1 cup steel cut oats
  • 1/2 cup pumpkin NOT pumpkin pie mix, puree
  • 1/4 cup honey or maple syrup
  • 1 Tablespoon pumpkin pie spice
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • pecan chopped pecans; scoop of nut butter; splash of milk; optional toppings
  • raisin
  • dried cranberry
  • nut butter
  • milk

Instructions

  1. Spray your slow cooker with a cooking spray to prevent sticking.
  2. Add all of the ingredients to the slow cooker and stir to combine.
  3. Cover and cook on high for 4 hours, or overnight on low for 7-8 hours. Your Pumpkin Spice Oatmeal is ready when the oats are soft but not too mushy. Serve with your favorite toppings (chopped nuts, raisins, a splash of milk, etc) and enjoy!

Notes

  • Use only steel cut oats; other oat types will become mushy after long slow cooking.
