  • 1 cup quick oatmeal
  • 1 cup almond milk Unsweetend
  • 1/2 cup pumpkin puree
  • 1 teaspoon pumpkin pie spice
  • 1 tablespoon almonds chopped
  • 1 tablespoon almond butter
  • 3 tablespoon maple syrup
  • 1 tsp chia seeds
  • 2 tsp flax seeds

Instructions

  1. Mix quick oatmeal and almond milk in a sauce pan.
  2. Cook over medium heat for 5 minutes until fully cooked.
  3. Add pumpkin puree, pumpkin pie spice , chopped almonds, almond butter and 2 tablespoons maple syrup. 
  4. Stir and cook for another 3 minutes.
  5. Pour cooked oatmeal in two bowls and top with whole almonds, chia seeds, flax seeds and one tablespoon maple syrup.

Notes

  • Peanut butter and peanuts can replace almond butter and almonds if preferred.
  • Combine all ingredients and refrigerate overnight; reheat in the morning by microwaving or on the stove.
  • Maple syrup can be substituted with honey or molasses for different sweetness profiles.
  • Adding chocolate chips to the cooked oatmeal is an optional way to enhance flavor.
