Pumpkin Spice Syrup

A recipe for homemade Pumpkin Spice Syrup! Pumpkin puree and spices are simmered with sugar and water to create a warming, comforting addition to fall-themed drinks.

Ingredients

  • 1 cup granulated sugar 200 grams
  • 1 cup light brown sugar 200 grams
  • 2 cups water 470 milliliters
  • 1/4 cup pumpkin puree 60 grams, pure
  • 1 tablespoon vanilla bean paste 15 milliliters
  • 2 cinnamon stick
  • 1 1/2 inch ginger roughly chopped, 4 centimeter piece, fresh
  • 8 cloves
  • 1/2 teaspoon nutmeg freshly grated

Instructions

  1. In a medium saucepan, combine the granulated sugar, light brown sugar, water, pumpkin puree, and vanilla bean paste.
  2. Add the cinnamon sticks, ginger, cloves, and nutmeg.
  3. Bring the mixture to a boil, then reduce heat to a simmer.
  4. Cook, whisking occasionally, until the sugar is dissolved and the liquid is starting to thicken slightly, 10-15 minutes.
  5. Remove from heat, cover, and allow to steep for 30 minutes.
  6. Strain the syrup through a fine mesh strainer and discard the spices.
  7. Cool completely to room temperature, then transfer the syrup to an airtight container and refrigerate for up to a week.
