Pumpkin Spice Waffle Recipe for Your Next Favorite High Protein Breakfast
Description
The pumpkin spice waffles combine protein powder with almond and tapioca flours, baking powder, baking soda, eggs, pumpkin puree, maple syrup, vanilla, and cinnamon to form a thick batter. Cooking on a preheated waffle iron produces crisp-edged waffles with a tender, spiced crumb. The pumpkin and cinnamon provide autumn flavors, and the protein powder boosts nutritional content.
The accompanying protein chocolate sauce, made from chocolate protein powder, cocoa powder, non-dairy milk, maple syrup, and optional coconut oil, adds a smooth, rich topping poured warm over the waffles. Optional garnishes like strawberries and hemp hearts provide freshness and texture contrast.
Each waffle contains approximately 12 grams of protein, with the chocolate sauce adding 5 grams per serving. Serving the waffles warm with the sauce creates a satisfying and nutritionally enhanced breakfast option suitable for those seeking a high protein start to the day.
Ingredients
Protein waffle recipe:
- 1 coop pea protein powder
- ½ cup almond flour
- ½ cup tapioca flour
- ¼ tsp. baking powder
- ¼ teaspoon baking soda
- 2 egg whole
- 1 cup pumpkin puree
- 2-3 tsp. maple syrup optional, or honey
- 1 tsp. vanilla extract pure
- 1 teaspoon cinnamon
- strawberries for serving (optional)
- hemp hearts for serving (optional)
Protein chocolate sauce:
- 2 tablespoon chocolate protein powder
- 1 tablespoon cocoa powder unsweetened
- 3 tablespoon non-dairy milk
- 1-2 teaspoon maple syrup optional
- ½ teaspoon coconut oil optional, melted
Instructions
Protein waffles:
- Preheat waffle iron to high heat.
- Combine all the ingredients in a blender. Process until smooth. Batter should be thick; if it’s too thin, add 1 teaspoon at a time of almond and tapioca flour.
- Spray the waffle iron with cooking spray. Add ¼ cup of batter to the waffle iron, close and cook until golden brown on the outside. Transfer to a plate and repeat until all the batter has been used. If serving immediately, let waffle sit for 2-3 minutes before serving for the best texture.
Protein chocolate sauce:
- In a medium bowl, combine chocolate protein powder, cocoa powder, non dairy milk and maple syrup.
- Whisk until a uniform mixture is attained. If chocolate sauce is a bit thin, add coconut oil.
- Pour protein chocolate sauce on waffles, top with strawberries, and serve immediately.
Notes
- Each waffle contains about 12 grams of protein, which helps fuel the day.
- The protein chocolate sauce adds approximately 5 grams of protein per serving.
