Pumpkin Turkey Chili
Description
The Pumpkin Turkey Chili combines ground turkey browned with onions, garlic, and red bell pepper, then simmered with pumpkin puree, fire-roasted tomatoes, and pinto beans. Spices including chili powder, smoked paprika, cumin, oregano, cinnamon, nutmeg, and red pepper flakes build layered warmth and mild heat. Maple syrup adds a touch of sweetness to balance acidity and spice.
Cooking begins by sautéing aromatics and ground turkey, then seasoning before adding the pumpkin and tomato components with beans. The chili cooks gently to meld flavors and thicken. It can be served with tortillas, avocado, sour cream, or cilantro as preferred.
This chili is suitable for doubling for larger groups and can be extended with longer simmering times for deeper flavor. It can also be prepared in a slow cooker starting with browned turkey and aromatics, allowing ease of preparation and consistent results.

- Note: you can easily make this in a slow cooker! Brown the turkey ahead of time then add everything to the slow cooker and cook on high for 4 hours or low for 6 to 8.
