Description
These waffles begin with dry ingredients including oat flour, pumpkin spice blend, baking powder, baking soda, and salt mixed together. Wet ingredients of eggs, pumpkin puree, maple syrup, almond milk, Greek yogurt and vanilla extract are whisked carefully to combine without overmixing.
The dry ingredients are folded into the wet to form a batter, which is cooked in a preheated waffle maker sprayed with cooking spray. Cooking time is about 4 minutes or as per the waffle maker instructions. After cooking, waffles are best kept crisp by placing on a cooling rack instead of stacking, which prevents sogginess.

Ingredients
- 1 ¼ cups oat flour or all-purpose flour
- 1 tablespoon pumpkin spice

- 2 large egg
- ½ cup pumpkin puree

Instructions
- Heat a waffle maker while mixing ingredients.
- Add the oat flour, pumpkin pie spice, baking powder, baking soda and salt to a medium mixing bowl and blend together.
- In a large mixing bowl, add the eggs, pumpkin puree, maple syrup, milk, yogurt and vanilla extract and whisk until combined well. (being careful not to over-mix)
- Add the dry ingredients to the pumpkin mixture and stir gently to just combine.
- Spray the waffle maker with cooking spray and pour in ½ cup worth of batter.
- Cook for about 4 minutes or follow the waffle makers manufacturer’s suggested cooking time.
- To keep the waffles crisp, put them on a cooling rack instead of stacking them on a plate.

- Oat flour is gluten-free; grind your own oats if preferred for freshness.
- Substitute white whole wheat flour or a blend of flours if desired.
