Purple Power (Blueberries, Kale & Apple)
Description
The recipe starts by steaming chopped apples and kale to soften and meld their flavors, leaving the blueberries to steam briefly for a shallow burst of sweetness and color. Blending these ingredients produces a smooth, vibrant purple puree with a balance of sweetness from the apple and blueberry and slight earthiness from the kale. The option to strain the puree ensures a finer texture if desired.
This puree can be served chilled or at room temperature and stored refrigerated for a few days or frozen for long-term preservation. It works well as a complement to meals or an easy serving of fruits and vegetables and can be portioned conveniently for use in baby food or smoothie bases.
Ingredients
- 2 apple washed, peeled and chopped, medium
- 1 cup kale washed, peeled and chopped, chopped, Tuscan (lacinato
- ½ cup blueberries washed
Instructions
- Place the apples and kale in a steamer basket set over boiling water. Cover and steam 8 minutes. Add the blueberries and steam an additional 2 minutes (optional).
- Puree with an immersion blender or food processor until smooth, adding a small amount of the cooking liquid if needed. If desired, strain the puree through a fine-mesh sieve. Cool and serve or store.
- Purple power puree can be stored in the refrigerator in an airtight container for 3 days or in the freezer for 3 months. If freezing, spoon individual portions into ice cube trays or baby food containers, then cover and freeze.
