Description

This dip starts by sautéing finely chopped onion and seeded jalapeño in oil until tender to build a mildly spicy and savory base. White American cheese and Monterey Jack cheese are then melted into the pan with added milk to create a smooth, creamy texture. Freshly diced tomato and minced cilantro are stirred in last to provide contrast in flavor and freshness.

The blend of creamy cheeses provides a mellow yet rich melting quality, while the jalapeño and onion add subtle heat and depth. The texture stays velvety, and additional milk can be added to adjust thickness depending on preference. Served warm, it's ideal for dipping tortilla chips or drizzling over dishes.

  • 1 tablespoon canola oil or vegetable oil
  • ¼ cup onion finely chopped
  • 1 jalapeno pepper seeded and finely chopped
  • 12 ounces American cheese shredded or sliced thinly, white
  • 4 ounces Monterey jack cheese shredded
  • 1/4-2/3 /4-2/3 cup milk
  • 1 medium tomato seeded and finely diced
  • 2 tablespoons cilantro fresh, minced

Instructions

  1. Heat the oil in a medium saucepan over medium-high heat. Add the onion and jalapeño to the pan and cook, stirring occasionally, until tender, about 5 minutes.
  2. Reduce the heat to medium-low.
  3. Add both of the shredded cheeses and 1/4 cup of the milk. Whisk or stir until completely melted.
  4. Mix in the tomato and cilantro, and add additional milk gradually as necessary to achieve desired consistency (I added about 1/2 cup total).
  5. Transfer to a warmed serving bowl and serve immediately.

Notes

  • White American cheese used here is often found pre-sliced at deli counters; cutting into thin strips works well if shredding is not possible.
  • Leftover dip reheats smoothly on low power in the microwave or gently on the stovetop without separating.
