Queso Fundido

Queso Fundido features cooked Mexican chorizo topped with melted shredded Queso Quesadilla cheese in an oven-safe skillet. The dish combines savory, spiced sausage with gooey, melted cheese, creating a rich and indulgent appetizer or snack best served immediately while warm.

Description

Queso Fundido begins with browning Mexican chorizo in oil to render its fat and develop its characteristic spicy, smoky flavor. After cooking, excess fat is drained to prevent greasiness, leaving just enough to enrich the dish. Grated Queso Quesadilla cheese is layered over the chorizo in the skillet and baked in a low oven until the cheese melts into a bubbly, smooth topping. Reserved cooked chorizo is placed atop the melted cheese for added texture and presentation.

This dish is typically served hot directly from the skillet, offering melty cheese combined with flavorful chorizo that can be scooped with tortilla chips or warm tortillas. The texture is creamy and bubbly from the cheese with hearty, spicy bites of meat.

Ingredients

Servings
  • 1 Tbsp neutral cooking oil $0.04, generic cooking oil
  • 1 lb. Mexican chorizo $2.64, beef or pork
  • 20 oz. Queso Quesadilla $5.51, shredded

Instructions

  1. Preheat oven to 300°F. Remove the chorizo from its casing (if any) and grate the cheese on the largest holes of a box grater.
  2. Set an oven-safe skillet over medium heat, and add the tablespoon of oil. Cook the chorizo for 7 to 8 minutes, until the fat renders and the sausage is bubbly.
  3. Drain the fat from the skillet, reserving 3 tablespoons of chorizo for garnish. If it's very greasy, place it on top of paper towels to get as much fat off of it as possible before putting it back in the pan. Top the chorizo with the grated cheese.
  4. Place the skillet in the oven and cook for 5 to 7 minutes, until the cheese is melted and bubbly. Place the skillet on a heat-proof surface, garnish with reserved chorizo, and serve immediately.
