Queso Fundido

Queso Fundido is a warm Mexican dish where spicy chorizo, sautéed onion, garlic, and roasted green chiles form a savory base topped with melted melting cheese. The combination results in a gooey, flavorful cheese dip perfect for scooping with tortilla chips or flour tortillas. Fresh cilantro adds a bright finish upon serving.

Description

The preparation begins by cooking Mexican chorizo in oil until browned and crumbly, then draining excess fat to keep the dish from becoming greasy. Finely chopped onion is added and softened, followed by minced garlic and diced roasted green chiles, which introduce a smoky, mildly spicy element. This flavorful mixture is spread evenly in an oven-safe skillet and covered with a generous layer of shredded melting cheese chosen for its ability to melt smoothly.

Baked at 350°F until the cheese is melted and gooey, the dish should be served immediately while hot and stretchy. Sprinkling chopped fresh cilantro on top adds a herbal contrast. Queso Fundido is commonly enjoyed with tortilla chips or warm flour tortillas and may be paired with salsa for extra zest.

  • 8 ounces Mexican chorizo (click link for our EASY homemade chorizo!)
  • 1 onion finely chopped, small
  • 2 cloves garlic , minced
  • 4 ounce roasted diced green chiles alternatively roast two fresh poblano peppers, discard charred peels, and dice, canned
  • 1 pound melting cheese shredded; use any combination of these cheeses, e.g. Oaxaca, Asadero, Chihuahua, Quesadilla, Monterey Jack, Pepper Jack, Havarti, Munster, Cheddar

Instructions

  1. Preheat the oven to 350 F. Heat the oil in a 10 inch oven-safe skillet. Add the chorizo and cook and crumble until brown. Drain off excess fat. Add the onion and cook until softened, 5-7 minutes. Add the garlic and roasted chiles and cook another two minutes. Evenly spread the mixture out on the bottom of the pan and sprinkle the cheese on top. Transfer the skillet to the oven and bake just until the cheese is melted and nice and gooey (do not over-bake or the cheese will become firm). Transfer the skillet to a heat-proof surface, sprinkle with the cilantro, and serve immediately with tortilla chips or warm flour tortillas and some salsa if desired.
