Quick 45 Minute Cinnamon Rolls

Quick 45 Minute Cinnamon Rolls use a simple dough of flour, sugar, salt, yeast, water, milk, butter, and egg, rolled with a cinnamon-sugar filling and topped with cream cheese glaze. The dough rests briefly before rolling, allowing for a fast baking process resulting in soft, sweet rolls with a creamy topping.

Description

This recipe for Quick 45 Minute Cinnamon Rolls begins with combining dry ingredients—flour, sugar, salt, and instant yeast—then mixing in warm water, milk, melted butter, and egg to form a soft dough. Kneading by hand or mixer develops the dough's structure, and a brief rest of five minutes helps relax it for shaping.

The dough is rolled out into a rectangle, spread with softened butter, and dusted evenly with cinnamon and brown sugar. Rolling tightly into a log and cutting into nine pieces shapes individual rolls that rise quickly once placed in a prepared pan covered for the brief proofing step.

Before baking, the rolls are drizzled with heavy cream, which feeds the yeast and helps them brown while keeping them moist. After baking, a glaze made of powdered sugar, vanilla, milk, and cream cheese is spread over the warm rolls, adding a rich, tangy sweetness.

These cinnamon rolls offer a fast alternative to traditional recipes by using instant yeast and a short proofing time but still yield tender, flavorful buns suitable for breakfast or dessert.

Ingredients

Servings
  • 2 and 3/4 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 3/4 teaspoon salt
  • 1 package instant yeast (1 packet = 2 and 1/4 teaspoons)
  • 1/2 cup water
  • 1/4 cup milk
  • 2 tablespoons butter unsalted
  • 1 large egg

Filling:

  • 1/4 cup butter softened, salted
  • 2 tablespoons ground cinnamon
  • 1/2 cup brown sugar
  • 1/4 cup heavy cream for drizzling over buns before baking

Glaze:

  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2-3 tablespoons milk
  • 4 ounces cream cheese room temperature

Instructions

Dough

  1. In a large bowl whisk the flour, the sugar, salt, and yeast together. Set aside.
  2. In a small bowl combine the water, milk, and butter together and heat in the microwave until the butter is melted, about 30-45 seconds.
  3. Use a fork to stir the liquid into the dry ingredients. Add the egg and knead by hand or with a stand mixer for 5-6 minutes, until the dough is no longer sticky. Form the dough into a ball and return to the bowl. Cover and let rest for 5 minutes.
  4. Turn on the oven to 200 degrees fahrenheit. Spray a 9x9 pan with cooking spray and set aside.

Filling

  1. In a small bowl, combine the brown sugar and cinnamon.
  2. Once the dough has rested, dust a clean surface lightly with flour and roll out the dough into a 15x9 inch rectangle.
  3. Spread the softened butter over the dough and dust evenly with the cinnamon sugar mixture. Roll the dough up tightly and cut into 9 even pieces.
  4. Place the rolls into the prepared pan and cover with plastic wrap or aluminum foil.
  5. Turn off the warmed oven and place the pan of rolls inside. Let them rise for 20 minutes. After 20 minutes have passed, remove the foil or plastic and drizzle the ¼ cup of cream evenly over the top of the buns.
  6. Return the buns to the oven and turn the oven to 375 degrees fahrenheit. Bake for 15-20 minutes, until the tops of the buns are golden brown.

Cream Cheese Glaze

  1. Beat the cream cheese, powdered sugar, vanilla, 2 tablespoons milk together until smooth. Add more milk as needed. Let the rolls cool for 20 minutes or so before spreading the glaze over the top.

  • The cream drizzled on the rolls before baking enhances browning and moistness.
  • The cream cheese glaze adds balance with its tangy sweetness over the cinnamon sugar filling.
