Quick and Easy Grilled Scallops
Description
Quick and Easy Grilled Scallops involve patting the scallops dry and marinating them in olive oil, lemon juice, and minced garlic for a few minutes before grilling. After seasoning with salt and pepper, the scallops are grilled over medium-high heat for just a few minutes per side until opaque and slightly charred, ensuring they remain tender and juicy.
The light marinade imparts fresh citrus and garlic notes while the brief grilling provides a mild smokiness without overpowering the delicate scallop flavor. Optional garnishes such as lemon wedges and parsley add brightness and a fresh herbal touch to the finished dish.
Serving grilled scallops shortly after cooking preserves their tender texture. They can also be reheated gently in a pan with olive oil. Using skewers for small scallops can prevent them from falling through the grill grates. Various marinade additions like lemon zest, chili flakes, or fresh herbs allow customization of flavor.
Ingredients
- 1 pound sea scallops thawed if frozen
- 2 tablespoons olive oil
- 1 tablespoon lemon juice or lime juice, fresh
- 1 clove garlic minced
- salt to taste
- black pepper to taste
- lemon and parsley for garnish, optional, wedges
Instructions
- Dab scallops dry with a paper towel.
- Combine olive oil, garlic, and lemon juice (and any additions below if using). Toss with scallops and let rest a few minutes while grill preheats.
- Preheat grill to medium-high.
- Once the grill is heated, oil the grates by adding oil to a paper towel and using tongs to rub the oil on the grates.
- Remove scallops from the marinade (discard marinade) and season scallops with salt & pepper. Grill for 2-3 minutes per side or just until opaque.
- Garnish with parsley and serve with lemon wedges.
Notes
- Thread smaller scallops on soaked wooden skewers to prevent them from slipping through the grill grates during cooking.
- Reheat leftovers by sautéing scallops briefly in a pan with olive oil over medium heat to maintain tenderness.
- Enhance flavor by adding optional marinade ingredients like lemon zest, red chili flakes, lemon pepper, or fresh herbs to the marinade.
