Quick and Easy Seafood Stew

This seafood stew is a brothy mix of shrimp and cod simmered with stewed tomatoes, bell peppers, celery, onion, and V-8 juice for a savory, slightly tangy base. The gently simmered vegetables soften to enhance the flavor without losing texture, while the seafood is added near the end to cook just until opaque, maintaining its tender quality. This stew can be served with bread or over grains for a complete meal.

Description

The Quick and Easy Seafood Stew brings together shrimp and cod in a tomato- and vegetable juice-based broth flavored with bell pepper, celery, onion, garlic, and seasonings. Vegetables are sautéed first until softened, then combined with stewed tomatoes, V-8 juice, water, salt, and pepper to form a flavorful simmering base. The seafood is gently simmered in the broth just until cooked through, ensuring a delicate texture.

The contrasting textures of tender seafood and softened vegetables create a hearty yet light stew. The subtle spice and acidity balance well with the natural sweetness of shrimp and the mildness of cod.

Serving this stew with crusty bread or a light salad rounds out the meal. Leftovers can be enjoyed over rice or pasta and store well refrigerated or frozen with proper thawing before reheating.

Variations can easily be made by substituting other seafood like scallops, lobster, or oysters, or using different white fish such as mahi mahi, tilapia, or halibut to customize the flavor and texture.

  • 14.5 ounces stewed tomatoes canned
  • ½ cup water
  • ½ teaspoon salt
  • ¼ teaspoon black pepper ground
  • 1 cup V-8 juice spicy
  • 1 pound Shrimp medium, shelled and deveined
  • 10 ounces cod fillet cut into 1-inch chunks

Instructions

  1. In a large saucepan, heat oil over medium heat until hot.
  2. Add pepper, celery, and onion and cook, stirring frequently, 5 to 6 minutes or until softened and lightly browned.
  3. Stir in garlic and cook 1 minute, stirring constantly.
  4. Stir in stewed tomatoes, vegetable juice, water, salt, and pepper. Cover and heat to boiling over high heat.
  5. Reduce heat to low and simmer, covered, for 10 minutes.
  6. Gently stir in cod and shrimp. Cover saucepot and simmer 3 to 4 minutes or until cod and shrimp just turn opaque throughout.

Notes

  • Pair the stew with crusty bread and a light salad for a balanced meal.
  • Store leftovers in the refrigerator for up to 3 days or freeze for up to 3 months, thawing overnight before reheating.
  • Substitute shrimp with scallops, lobster, or oysters to vary the seafood options.
  • Try different fish like mahi mahi, tilapia, or halibut for a different flavor profile.
