Quick Broccoli and Cheese

This Quick Broccoli and Cheese recipe steams broccoli florets until tender-crisp before topping them with a thickened cheese sauce made from milk, cornstarch, cheddar, and Parmesan cheese. The cheese sauce is whisked over heat until smooth and coats the broccoli, creating a creamy and comforting vegetable side dish with a balanced cheesy flavor and gentle seasoning of salt and pepper.

Description

The recipe begins by steaming fresh broccoli florets in a small amount of water, ensuring they remain bright green and retain a slight crunch. After steaming, the broccoli is covered to keep warm while the cheese sauce is prepared in the same skillet, minimizing dishes.

The cheese sauce is made by whisking milk and cornstarch over medium heat until thickened, then adding shredded cheddar and grated Parmesan cheese off-high heat to avoid curdling. The sauce becomes smooth and coats the back of a spoon, rich with the sharpness of cheddar and the nutty undertones of Parmesan.

This dish pairs well as a side for poultry, pork, or beef, offering a creamy vegetable option that can also be served as a light main with added protein. Seasoned simply with salt and pepper, it highlights the freshness of broccoli with a savory cheese topping.

Leftovers keep well for several days when stored separately and can be reheated gently in the microwave or warmed stovetop, whisking the cheese sauce to restore its texture.
