Quick & Easy Bang Bang Shrimp
Description
Quick & Easy Bang Bang Shrimp combines jumbo shrimp that are first soaked in buttermilk to tenderize, then coated in a seasoned cornstarch blend for a light, crispy crust. The shrimp are fried in vegetable oil until just golden, ensuring they remain juicy inside. The coating provides a delicate crunch that contrasts with the creamy, sweet-spicy Bang Bang sauce made from mayonnaise, Thai sweet chili sauce, and Sriracha. Finely chopped green onions add a fresh, mild sharpness as a garnish. The recipe includes an alternative air fryer method to achieve crispiness with less oil.
The sauce offers a balanced heat with sweetness and creaminess that complements the shrimp's natural flavor. The dish is well-suited as an appetizer or served over rice for a main dish variation. Cooking in batches is important to avoid overcrowding, which preserves the crispy texture.
To air fry, lightly oil the basket and shrimp pieces, place them spaced apart, and cook at 400°F for 7-8 minutes, flipping halfway through. This yields a crispy shrimp with less oil absorption. The sequence of dredging shrimp in cornstarch and shaking off excess ensures an even fry with a perfectly crunchy finish.
Ingredients
- 1 lb Shrimp peeled and deveined, jumbo
- 1 cup buttermilk or sub with 1 cup whole milk and 1 tablespoon lemon juice and let it sit for 5 minutes first
- ¾ cup cornstarch or substitute with potato starch/tapioca starch
- 1 cup vegetable oil or any neutral oil
- ¾ teaspoon salt
- ¾ teaspoon garlic powder
- ½ teaspoon black pepper
- 1 green onion finely chopped for garnish
Bang Bang Sauce:
- ½ cup mayonnaise or substitute with normal mayo, Japanese
- ¼ cup Thai sweet chili sauce
- 2 tablespoon Sriracha sauce add more if you like it spicier
Instructions
- In a medium bowl with peeled and deveined shrimp, add buttermilk. Let this sit for 10 minutes for shrimp to tenderize.
- In a small bowl, combine Bang Bang Sauce ingredients as listed. Set aside.
- In a shallow bowl or baking sheet, whisk together cornstarch, salt, garlic powder and black pepper.
- Coat shrimp in cornstarch mixture by dredging it on both sides.
- In a large skillet (10-inch) or heavy bottom pan, add oil. Heat oil on medium heat or at 350 degrees F on a digital instant read thermometer. Once oil is hot enough, fry shrimp in batches. Fry until you have golden brown shrimp, about 1.5 minutes per side. Do not overcrowd the hot oil or the shrimp won't be crispy. Also do not overcook the shrimp.
- Remove and set aside the cooked shrimp on a wire rack or paper towel lined plate to remove excess oil.
- Transfer crispy shrimp to a large bowl. Pour sauce over top. Gently toss to mix.
- Garnish with green onions. Enjoy!
Notes
- Air frying is a great alternative to deep frying to reduce oil usage while maintaining crispness.
- Make sure not to overcrowd the frying pan or air fryer to keep shrimp crispy.
- Use fresh green onions as garnish for a subtle, complementary flavor contrast.
