Quick & Easy Tofu Katsu features extra-firm tofu coated in a crisp panko breadcrumb crust seasoned with garlic powder and salt. The tofu is sliced into pieces, thoroughly dried, then dredged in cornstarch, egg, and panko before shallow frying to a golden brown. This method creates crunchy exterior tofu slices that can be served as a snack or an entrée.

Description

This dish starts with extra-firm tofu sliced into about 1 cm thick pieces. Patting the tofu dry removes moisture which helps the coating adhere during frying. Each tofu piece is seasoned with salt and garlic powder, then dipped sequentially into cornstarch, beaten egg, and panko breadcrumbs, ensuring an even, thorough crust. The tofu is fried in hot vegetable oil for approximately 3 minutes per side until golden and crisp.

The resulting tofu katsu has a crunchy texture on the outside, contrasting with the soft tofu inside. It can be served sliced and accompanied by dipping sauces or alongside rice and vegetables as part of a meal. The frying technique requires moderate oil and attention to maintain a golden crust without burning.

  • 1 lb tofu extra firm
  • 6 tablespoon cornstarch or potato starch
  • 1 large egg beaten
  • ¾ cup panko breadcrumbs
  • cup vegetable oil or any neutral oil
  • 1 teaspoon garlic powder
  • ½ teaspoon salt

Instructions

  1. Slice the block of tofu vertically into 1 cm thick pieces. Pat dry each piece on both sides with paper towels to remove excess moisture. This is important or your coating will fall off.
  2. Generously season each piece of tofu salt and garlic powder on both sides.
  3. Prepare breading station. In the first bowl, add cornstarch. To the second bowl, beat the eggs. To the third bowl, add panko breadcrumbs. Dredge the tofu into cornstarch, then beaten eggs, and lastly panko breadcrumbs. Make sure to coat the tofu on all sides, ensuring no bald spots.
  4. Heat vegetable oil in a large frying pan on medium heat. To test if oil is hot enough, place a wooden chopstick into the oil and if bubbles form then it's time to fry.
  5. Carefully lower breaded tofu into the hot oil and fry for 3 minutes on each side until golden brown.
  6. Remove from large pan and transfer to a wire rack or a paper towel lined plate to remove excess oil. Slice each piece on a cutting board with a knife and enjoy!
