Quick Ground Turkey Chili

Turkey chili is a great lighter option for busy weeknight meals. This easy one-pot recipe is full of flavor and comes together in just a little over 30 minutes.

Ingredients

  • 2 tablespoons olive oil
  • 1 large yellow onion diced, or white onion
  • 1 pound ground turkey 85% lean
  • 1 teaspoon salt plus more to taste
  • ¼ cup tomato paste 66g
  • 4 cloves garlic minced or pressed
  • 2 tablespoons chili powder
  • 2 teaspoons cumin ground
  • ½ teaspoon black pepper
  • 14 ounces tomato crushed or diced
  • 15 ounces pinto beans drained and rinsed*
  • 15 ounces Kidney Beans drained and rinsed*
  • 1 cup chicken broth *

Toppings

  • sour cream optional
  • cheese optional, shredded
  • cilantro optional

Instructions

  1. In a large pot, heat oil over medium heat. Once the oil is hot, add your diced onion and cook until onions just begin to turn translucent around the edges, about 5 minutes.
  2. To the onions, add the turkey and salt. Cook, stirring often, until turkey is browned.
  3. Stir in tomato paste, garlic, chili powder, cumin, and pepper, and cook for 1 to 2 minutes until aromatic.
  4. Add the tomatoes (with their juices), drained beans, and broth. Bring to a low simmer and simmer the chili uncovered, stirring occasionally, for 20 to 30 minutes, until the meat is cooked through and chili has thickened.
  5. Taste and add additional salt and pepper if necessary.
  6. Spoon into bowls, top with sour cream and cheese if desired, and enjoy!

Notes

  • *You can substitute whatever combination of canned beans you prefer here.
  • *The chicken broth helps to flavor the chili, but you can substitute for it with water, vegetable, or beef broth.
  • Storage Instructions: Store tightly covered in the refrigerator for up to 2-3 days.Freezing Instructions: To freeze chili, place it in a freezer bag either altogether or in individual servings. Store in the freezer for up to 2 months for best freshness. Defrost the chili overnight in the refrigerator and reheat in either the microwave or on the stove.
