Quick Marinated Tomatoes

Quick Marinated Tomatoes are peeled quartered tomatoes mixed with diced dill and garlic, then soaked in a tangy marinade of ketchup, sugar, salt, and cooled boiled water. After marinating in the refrigerator for at least 24 hours, the tomatoes absorb the flavors, making for a refreshing, mildly sweet and herbed tomato side or salad. The preparation softens the tomato skins and infuses herbaceous and garlicky notes, suitable for cold servings.

Description

This recipe begins by slicing skins crosswise and soaking whole tomatoes in boiled water briefly, which helps loosen the skins for easy peeling. After peeling, the tomatoes are cut into quarters and combined with diced dill and garlic, contributing fresh herb and pungent flavors.

A marinade is prepared from ketchup, sugar, salt, and cooled boiled water whisked together to create a balanced, sweet and savory liquid that complements the fresh tomatoes. Pouring this over the tomato mixture and refrigerating for at least 24 hours allows the flavors to develop and tomato pieces to soak thoroughly, resulting in a bright, tangy dish.

The marinated tomatoes are served cold, making them suitable for summer meals or as a palate-cleansing side dish. The garlicky dill flavor mingles with the slight sweetness of ketchup and sugar, providing a unique twist on fresh tomatoes without cooking.
