Quick Pickled Celery

Quick Pickled Celery offers a crisp, tangy condiment combining diced celery and onion infused with dill and pickling spices. The celery softens slightly but retains crunch after marinating in a mixture of white wine vinegar, water, sugar, salt, and celery seed. Refrigerating for two days allows flavors to meld, resulting in a bright, refreshing pickle that complements sandwiches, salads, or charcuterie.

Description

This recipe for Quick Pickled Celery starts with finely diced celery heart and onion mixed with a fresh sprig of dill. A hot pickling liquid is prepared by heating white wine vinegar, water, sugar, kosher salt, and celery seed until the sugar dissolves completely.

The hot liquid is poured over the vegetable mixture, then cooled to room temperature before refrigeration. The acidity and seasonings gently pickle the celery and onion, infusing them with lemony, slightly sweet, and herbal flavors while maintaining a firm texture.

After two days chilling, the pickled celery is ready to use. It stores well for multiple weeks in the refrigerator and adds a refreshing, acidic crunch to dishes, serving as a condiment or side to balance richer flavors.
