Quick Pickled Green Tomatoes
Description
This recipe uses a boiling vinegar and water mixture poured over green tomato slices along with cumin seeds, whole peppercorns, fresh dill, chives, and minced garlic. The tomatoes soften slightly as they pickle, absorbing the spices and herbs, which impart a savory and bright flavor with subtle spice. After cooling and refrigerating for at least three hours, the pickled tomatoes develop a well-rounded tang and crunchy texture.
The process is straightforward, using common pickling spices and herbs to enhance the natural acidity of green tomatoes while keeping a fresh texture. This quick-pickling method eliminates the need for long fermentation.
Pickled green tomatoes can serve as a tangy side dish, topping, or accompaniment to sandwiches and grilled meats. The pickling liquid can be reused after straining and re-boiling for subsequent batches, extending the utility of the brine.
The recipe emphasizes packing the jars tightly to keep ingredients submerged and suggests experimenting with different herbs and seasonings to adjust flavor profiles according to taste.
Ingredients
- 1 ½ cups white vinegar
- 1 ½ cups of water
