Description

Chicken breast pieces are first dredged in a seasoned flour mixture, dipped in an egg and water wash, and finally coated thoroughly with cooked quinoa. The nuggets are placed on a greased baking sheet, optionally sprayed with cooking spray to enhance browning and crispiness, and baked at 425°F until golden and cooked through. This method yields baked nuggets with a crunchy exterior from the quinoa, and juicy interior from the chicken. They can be served hot with dipping sauces such as ketchup or honey mustard.

  • 3-4 chicken breast cut into 2-inch pieces, boneless skinless
  • cup flour
  • 1 teaspoon salt
  • ¼ teaspoon black pepper
  • 3 egg
  • 2 tablespoons water
  • 2 cups quinoa cooked

Instructions

  1. Preheat oven to 425 degrees and grease a baking sheet. In a small bowl whisk flour, salt, and pepper. In a second bowl whisk eggs and water. Place quinoa in a third bowl.
  2. Dredge chicken pieces in flour mixture, then eggs, and lastly in the quinoa being sure to coat well. Place on prepared baking sheet.
  3. Spray chicken nuggets generously with cooking spray (this helps the nuggets to get crispy but can be skipped if you prefer) and bake for 15-20 minutes until nuggets are cooked through and browned. Serve with your favorite dipping sauces such as bbq sauce, ketchup, sweet and sour sauce, etc.

Notes

  • Serve the nuggets with your preferred dipping sauces; ketchup and honey mustard complement the flavor well.
  • Spraying the nuggets with cooking spray before baking helps achieve a crispier crust but can be omitted if preferred.
