Ingredients
- 1 cup grape tomato quartered
- 15 oz garbanzo beans rinsed and drained, canned
- 1 cup quinoa cooked
- 2 tbsp red onion (minced)
- 2 tbsp cilantro (minced)
- 1 1/2 lime juice of
- kosher salt to taste
- black pepper to taste
- 1 cup cucumber diced
- 4 oz avocado 1 medium hass, diced
Instructions
- Combine all the ingredients except for avocado and cucumber, season with salt and pepper to taste.
- Keep refrigerated until ready to serve.
- Just before serving, add cucumber and avocado.
