  • 15 oz garbanzo beans rinsed and drained, canned
  • 1 cup quinoa cooked
  • 2 tbsp red onion (minced)
  • 2 tbsp cilantro (minced)
  • 1 1/2 lime juice of
  • kosher salt to taste
  • black pepper to taste
  • 1 cup cucumber diced
  • 4 oz avocado 1 medium hass, diced

Instructions

  1. Combine all the ingredients except for avocado and cucumber, season with salt and pepper to taste.
  2. Keep refrigerated until ready to serve.
  3. Just before serving, add cucumber and avocado.
