Ingredients
- 1 TBS olive oil divided
- 2 egg
- 2 cloves garlic minced
- 1 small onion diced
- 1 TBS ginger grated
- 8 ounces baby bella mushroom chopped
- 2 cups broccoli chopped, chopped, frozen or fresh
- ½ cup carrot grated
- 1 zucchini chopped
- 1 ½ cups quinoa rinsed and patted dry
- 2 ½ cups water
- ½ cup corn frozen
- ½ cup peas frozen
- 3 TBS soy sauce lower sodium
- 4 talks green onions chopped
