Quinoa Salad
Description
This Quinoa Salad features cooked quinoa mixed with thinly sliced cucumber, halved cherry tomatoes, diced yellow and orange bell peppers, minced red onion, crumbled feta cheese, chickpeas, chopped parsley, and sliced kalamata olives. The ingredients create a balance of tender grains, crisp vegetables, creamy cheese, and savory olives.
The dressing, prepared separately by shaking olive oil, red wine vinegar, lemon juice, Dijon mustard, dried oregano, garlic and onion powder, salt, and pepper, adds bright acidity and subtle spice notes that complement the salad ingredients while keeping the dish light and fresh.
After tossing the dressing into the quinoa mixture, the salad is garnished with additional parsley and served chilled or at room temperature. It pairs well with grilled meats or as a vegetarian main dish.
Ingredients
- 2 cups quinoa cooked
- For the dressing:
- 1 cup cucumber thinly sliced
- ¼ cup olive oil
- 1 cup cherry tomato halved
- 1 teaspoon Dijon mustard
- 1/4 cup yellow bell pepper diced
- 2 tablespoons red wine vinegar
- 1/4 cup bell pepper diced, orange
- 1 tablespoon lemon juice
- 1/4 cup red onion minced
- ¼ teaspoon garlic powder
- 1/2 cup feta cheese crumbled
- ¼ teaspoon onion powder
- 2 tablespoons parsley plus more for garnish, chopped
- ½ teaspoon oregano dried
- 1 cup chickpeas drained and rinsed
- salt to taste
- black pepper to taste
- 1/4 cup kalamata olives sliced
Instructions
- For the salad: Place the quinoa, cucumbers, cherry tomatoes, bell peppers, onion, feta cheese, chickpeas, parsley and olives in a large bowl.
- For the dressing: Combine all of the ingredients in a jar and shake vigorously to combine. Store in the refrigerator for up to one week.
- Pour the dressing over the quinoa mixture and toss to coat evenly. Sprinkle with parsley, then serve.
