  • 100 g quinoa cooked
  • 150 g cheese grated
  • 1 small black pepper
  • 4 mushrooms
  • 2 egg
  • 1 handful of baby spinach
  • salt
  • black pepper

Instructions

  1. Bring a small pot of water to a boil (twice that of the amount of quinoa). When the water starts to boil, rinse the quinoa well and boil for about 15 minutes.
  2. Mix the cooked quinoa with the grated cheese, diced peppers, mushrooms, chopped baby spinach, and eggs.
  3. Season the mix with salt and pepper to your liking.
  4. Divide the mixture into 12 muffin tins, greased with olive oil beforehand.
  5. Bake for about 25 minutes at 175 °C (347 °F). It’s so easy, and the result is a batch of savory and filling muffins that are sure to please even the pickiest eaters.
  6. They can be made with chicken, shrimp, ham, eggplant, greens, and different types of cheeses, so you can play around for your perfect combination.
