Quinoa Savory Muffins
Description
Quinoa Savory Muffins are made by boiling quinoa until cooked, then mixing it with grated cheese, diced black pepper, sliced mushrooms, chopped baby spinach, and eggs. Seasoned with salt and black pepper, the mixture is divided into greased muffin tins and baked at moderate temperature until set and golden.
The baked muffins offer a savory and filling texture, combining the nuttiness of quinoa with the moistness of vegetables and richness from cheese and eggs. The cooking process results in firm muffins that hold together, suitable for snacks or light lunches.
These muffins are flexible; the ingredients can be varied with additions such as chicken, shrimp, ham, eggplant, and other greens or cheeses. They are convenient to prepare in batches and can be served warm or at room temperature.
